Inspection Memo: |
Reinspection for Major Violations cited on 7.30.24 due to walk-in refrigeration unit not operating properly.
At time of inspection facility had not had unit prepared. They were still using the walk-in freezer and chicken was holding at 35*F. They were also using reach in refrigeration units to hold their chicken and was observed at 40*F.
Facility needs to keep inventory of raw chicken and cheese low due to very limited proper refrigeration space.
In order to fix violation temperature of potentially hazardous food items must be at 41*F and walk-in freezer connected to unit must be able to freeze items.
Note: After speaking with Kevin, the owner of facility, refrigeration unit will take longer to be fixed due to requiring ordering parts. He also mentioned that unit might be a total loss and might need to be replaced. In the mean time facility can purchase and install commercial refrigeration and freezer units in order to keep working. Remove all food items from walk-in refrigerator. Facility is still responsible for installing a working commercial refrigeration. Facility can have either a walk-in refrigeration unit or commercial units in facility. Facility has 6 months to repair/replace walk-in unit, but must install temporary units in the mean time.

Major Violation: Observed walk-in refrigeration at 62*F ambient temperature. Per manager walk-in unit stopped working earlier today. Note: Manager had already removed raw chicken from refrigeration unit and placed it in freezer. Manager also had to move cheese and sauces made in house to freezer. Manager has called unit to be serviced and they have an appointment for tomorrow July 31st 2024. Facility is using reach-in refrigeration unit to hold their marinated chicken at 41*F. Facility set up ice bath for chicken and cheese. VIOLATION MITIGATED ON SITE. Facility is not to store any potentially hazardous food in refrigeration unit until it has been serviced and reinspected by Placer County Environmental Health. Contact inspector for re-inspection once unit has been serviced.

Observed hot water at 3 compartment sink at 113*F. Hot water must be at 120*F when measured from the faucet. Adjust unit so that hot water is at 120*F. Note: Isaak adjusted hot water heater and it measured at 125*F. CORRECTED ON SITE.
