White tubing was observed descending into floor sink of one of the baking ovens. ALl indirect waste connections shall have a 1 inch air gap between the fixture and the floor sink. Create one inch air gap for all indirect waste connections.

This is the follow up inspection to the routine inspection conducted on 4/5/2024.
The following shall be corrected:
14) Chlorine Ware wash machine shall dispense detergent, rinse, and sanitizer per cycle. The sanitizer phase shall dispense chlorine at 50-100 ppm.
At time of re inspection, ware wash machine was not being used and "DO NOT USE" sign was posted.
Schedule for re inspection when ware wash machine has been repaired or replaced.

1) WAre wash machine is not dispensing chlorine during the sanitation phase. Chlorine shall be dispensed at 50-100 ppm during the sanitation phase. Repair or replace ware wash machine. Ware wash machine shall not be used until repaired and re inspected. 2) Ware wash machine was being used however unit was using an empty detergent container. Automatic or Manual ware washing shall be done using the wash, rinse, sanitize method. Discontinue using ware wash machine until detergent has been restocked. Employee stated that detergent for ware wash machine had ran out and needed to be ordered. Dawn detergent was available for manual ware washing and employee was instructed to use 2 compartment sink for ware washing (Wash, rinse, sanitize).
