A couple of prep refrigerators are missing thermometers. Provide an accurate, easy-to-read thermometer for each unit.

Both the kitchen and bar dishwashers were not dispensing sanitizer during the rinse cycles. After replacing the tubing, they were both dispensing adequate sanitizer. Test these daily, to ensure 50ppm chlorine is dispensed.

A soap dispenser is missing at the bar handwash sink. Provide a soap dispenser here - preferably wall-mounted.

The large prep refrigerator handles have an accumulation of food debris on the underside of the handles. Frequently and thoroughly clean these.

Observed cooked chicken in reach in fridge under neath raw burgers. Any cooked meat shall be stored above raw meat. Corrected on site.

Observed accumulation of food debris on food blender and surrounding area. Deep clean to not attract pests.

The bar dishwasher is still not dispensing adequate sanitizer during the rinse cycle. (Fresh sanitizer has been supplied. Most likely the problem is the tubing for the pump needs to be replaced.) Repair the dishwasher to dispense 50ppm chlorine during the rinse. Until it's repaired and verified, wash all dishware in the kitchen dishwasher.

*Obtain the chlorine test strips and use these daily to test the dishwashers.*

Observed dead mice inside a glue board/trap at the bar. Remove this and thoroughly clean and sanitize this area. Within one week have a professional pest control company service the facility. Provide a receipt. Note - no other indication of rodent activity observed.

There is an accumulation of grime and food debris on the floor, under shelves near the walk-in refrigerator. Clean here frequently and thoroughly.

Observed several plastic spatulas that are cracked and worn. Observed metal spatulas with handles wrapped in old, worn, tattered tape. These are no longer easily cleanable; replace these with new ones.

Observed old, worn, dirty tape on the edge of the dishwasher counter, as well as on one of the handles of the three-door prep refrigerator. Also observed tattered tape on the swinging door to the kitchen. Remove tape; provide a smooth, durable, cleanable surface in these areas.

Observed an accumulation of old food debris on the inside of the handles of the three-door prep refrigerator. The soda gun at the bar (next to the dishwasher) has an accumulation of grime. Frequently and thoroughly clean and sanitize these areas.

The bar dishwasher is not dispensing adequate sanitizer- rinse cycle. (The sanitizer solution is clear, indicating it may not be strong enough.) Repair the dishwasher to dispense 50ppm chlorine during the rinse cycle. Until repaired, use the kitchen dishwasher. Obtain chlorine test strips; frequently test the rinse cycle (at least daily).

There is no paper towel dispenser at the bar handwash sink. Provide one here.
