New tomatoes were cut and a sticker with time stamp was supplied to use time as a public health control for this item moving forward. CORRECTED ON SITE.

Observed sausage/egg/ham croissants in sales area using time as a public health control that had exceeded the time on the sticker. Sticker indicated to discard by 1:37PM, inspector on site at approximately 4:15PM. When using time as a public health control, ensure all items are discarded when they have passed the time limit (out of temperature control for over 4 hours). Croissants discarded during inspection. CORRECTED ON SITE.

Repeat violation - Observed an accumulation of cardboard boxes and trash piled outside the back door. Premise must be maintained clean and free of rubbish. Clean and maintain.

Observed dirt and debris accumulation under the icee machine. Pull out equipment and thoroughly clean.

Observed sanitizer bucket at <50ppm quat sanitizer. Quat sanitizer must be provided at 200ppm and be changed out at least every 4 hours. Corrected on site.

Observed cheese probed at 48*F in the reach in refrigeration unit in the back food prep area. Cold holding must be maintained at <41*F. Service/adjust unit to hold at <41*F. Comply by 5.11.2022. Note: all product must be moved to the walkin cooler under reachin refrigerator is holding proper temperature.
