Observed multiple food handler cards to be expired. Update staff training to have current food handler cards.

All Food manager certifications are current and up to date.

Women's restroom facilities is currently using a portable hand sink. Informed that the sink was broken by a guest prior to the inspection. Wall mounted soap and paper towel holders are in place, portable sink was observed to be able to reach 102*F.

Use of the portable hand sink is allowed to mitigate temporary loss of the hand sink. Prior to repairs, send spec sheets of new sink to Placer County Environmental Health for approval, if not a 1-to-1 replacement.

REPEAT VIOLATION: Observed tubing resting in floor sink at the beverage station. Maintain a 1-icnh air gap in case of possible sewage back up.

1. REPEAT VIOLATION: Observed ice build up on freezer unit, clear away ice and service unit as needed.

2. Observed water build up in bar beverage refrigeration unit. Clean affected area and service unit as needed.

Observed piping resting in floor sink at beverage station. Maintain a 1-inch air gap in case of possible sewage back up.

1. Observed ice build up in walk-in freezer condenser. Remove ice, service unit as needed.

2. Observed a spill at the soda syrup boxes. Clean affected area. CORRECTED ON SITE.

3. Observed water spill at beverage station floor sink. Clean affected area.

REPEAT VIOLATION: Observed High-Temp dishwasher to not 160* F, verified with high temp thermometer and temperature stickers. Service dishwasher to ensure it is reaching proper temperature for sanitation.

Mitigate violation by hand washing at three compartment sink. Verify by sending record of corrected wash-machine to Placer Counter Environmental Health Specialist.

Observed bottom shelf in walk-in freezer to be broken. Discontinue use of shelf and repair affected area.

Observed High-Temp dishwasher not reaching 160* F, observed to be 147.3*F. Service dishwasher to ensure it is reaching proper temperature for sanitation.

Sanitize dish ware at the 3-compartment sink.

Observed beverage blender soaking in the hand sink at the bar area instead of the bar 3 compartment sink. Hand washing sinks shall be used only for hand washing. CORRECTED ON SITE.

Observed bar area 3-compartment sink drain line without proper air gap to floor sink. Please ensure an air gap of at least 1" between drain pipe and upper rim of floor sink.

Observed missing hood filter in hood. Please replace missing filter to ensure no open gaps in hood.

OBSERVED: Food handler certification cards that were expired. Please keep current food handler certifications on file.

Observed High-Temp dishwasher not reaching 160° F . Please service dishwasher to ensure it is reaching proper temperature for sanitation. Please use 3-compartment sink to sanitize dishes in the meantime. Please get proper test strips for high-temp dishwasher.

Observed 2 bags of onions on floor next to soda machine syrups. Please ensure all food is stored at least 6 inches off of ground. CORRECTED ON SITE.

Observed small bowls being used as scoops in dry food bins such as bar spice and rib rub. Please use proper scoops with handles.

Observed cooked ribs in cold holding drawer in cook line were stacked such that the ribs were in contact with top of drawer. Please keep food level to at or below fill line of drawers.
