Comments:
Upon re-inspection observed refrigeration unit holding ambient temperature at 40*F. Items probed at: 41*F for tomatoes and 41*F for sliced cheese.

Observed linens outside of sanitizer buckets. Sanitizing linens must be kept inside sanitizer buckets when not in use.

Observed temperature in middle two door turbo air reach-in cooler in cook line holding potentially hazardous food above 41*F. Sliced tomato was at 61*F. Sliced cheese at 61*F. Instructed employees to throw away compromised food that was out of temperature for 4 or more hours. Food was thrown out. Rest of items were put in walk-in cooler. Owner called refrigerator technician to work on the unit, believed it was in defrost mode during work hours. Violation was mitigated on site.

Observed multiple cans of raid. Vermin proofing must be done by a licensed contractor. Remove cans of raid immediately and stop using. Discussed with manager why they can't use raid and instructed them to remove can from the facility.

Observed automatic dishwasher at 0ppm chlorine. Dish washer must have chlorine solution at 100ppm to sanitize. Corrected on site by allowing clow of chlorine into dishwasher.

Observed no paper towels in dispensers in cooking area and pizza area. Corrected on site.

Major Violation cited today, inspector will return on 8.19.2022 to confirm all major violations have been corrected. Failure to correct major violations will be subject to re-inspection fee and/or yellow placard. Contact inspector at (530) 718-4156 when violations have been corrected.
This inspection report also doubles as a complaint response (CO0025304).
Complaint description: Complainant received food borne illness (salmonella). Stated they ordered butcher's board menu item prior to food borne illness.
Note: Discussed complaint with owner, owner was unaware of complaint and described items on butcher's board which include: cured meats, cheese, pesto marinade, zucchini, olives, almonds, toasted garlic, and ciabatta.
Observed the following:
1. walk-in cooler where they keep butcher's board items recorded at <41*F.
2. Sanitizer buckets were inspected on site and were at 200ppm Quat
3. Employees washed hands before handling food prep.
