Hot water reached a maximum of 104F at the 3-compartment sink at the beginning of the inspection and then reached 114F.
Hot water shall be provided at 120F.
Correct immediately.

Observed mold growing on the inside of the ice machine.
All equipment shall be kept clean and sanitized.
Ice was drained and the unit was cleaned and sanitized at time of inspection.

Observed sushi rice stored with time as a public health control and no labels.
When time alone is used as a public health control, the item shall be labeled with the date and time it was removed from temperature control and marked with the time it shall be sold, eaten, or discarded (4 hours after removing from temperature control).

Sushi rice was observed at 110F.
All potentially hazardous food shall be at 41F and below or 135F and above.
