Sanitizer shall be provided at 200ppm Quat.
Have dispenser adjusted to provide sanitizer at the correct concentration.

Observed clam chowder in food warmer well being reheated.
Clam chowder had been in warmer for almost two hours and had spots at 90F.
All PHF items shall be rapidly reheated to 165F within 2 hours.
A food warmer is also not designed to reheat food but to hold food at safe hot holding temperatures.
Discontinue practice of reheating food in food warmer.

Observed sanitizer dispenser providing sanitizer at a concentration less than 200ppm Quat.
Sanitizer shall be provided at 200ppm Quat.
Have dispenser serviced.
Correct immediately.
