Observed walk-in refrigerator ambient temperature at 44 °F. Please correct (maintain 41°F or below).

Observed sanitizer bucket in bakery area at 0 ppm. Maintain at 100 ppm.
Corrected during inspection.

-Observed no thermometer in the walk-in refrigerator. Note: A thermometer was removed from another refrigerator and placed in the walk-in. Please provide accurate working thermometers in each refrigeration unit.

Observed boxes of vegetables on the floor of the walk-in. According to the manager items had just been delivered this morning. Store all food at least 6" off the floor on approved shelving. Corrected during inspection.

Observed self-serve refrigerator containing pre-made sandwiches and salads at ambient temperature below 41 degrees F. Tuna salad probed at 35 degrees F, sliced tomatoes probed at 34 degrees F.

Observed sanitizer buckets at 0 ppm chlorine. Maintain 100ppm.

Change solution in buckets frequently during the day to maintain proper concentration.

-Observed food and debris build-up on shelving in the walk-in cooler. Please clean.
-Observed dust and debris build-up on fan guards in the walk-in cooler. Please clean.
