Observed flies (fruit flies/drain flies) in the floor sink underneath the standing cold holding unit across from the walk-in cooler.
Clean drain.
Start pest control service.

Observed wiping cloths stored in a bucket of sanitizer with 0ppm Chlorine.
Sanitizer buckets shall be prepared at 100ppm Chlorine and switched out every 4 hours or sooner as needed.
MITIGATED ON SITE.

Observed grime build-up on the inside of the ice machine.
All equipment shall be kept clean and sanitized.
Drain ice, clean and sanitize the unit.

Observed no valid food handler cards at time of inspection, including a food safety manager certificate.
All employees shall have a valid food handler card.
All food facilities shall have at minimum one certified food safety manager.
Correct by 11/25/24.

Observed raw lamb legs thawing at room temperature.
Food shall be thawed in one of the following approved ways:
1. Under refrigeration.
2. Completely submerged in cold running water for a period not to exceed two hours.
3. In a microwave.
4. During the cooking process.
Discontinue practice.

Observed several items in the cold holding unit with an internal temperature of 48F.
All cold holding shall be at 41F and below.
Correct immediately.
