Observed cold holding at refrigeration unit in front of the cook line (diced tomato, broccoli, carrot, cauliflower) probed 48*F. Adjust cold holding at or below 41*F.
All vegetables probed 48*F were transferred to ice containing metal container. Use ice to maintain cold holding until refrigerator unit is fixed. Call 530-488-0399 for re-inspection.
