Alleged Complaint: Unsanitary food handling practices
- Discussed the complaint with the manager, Juan Murillo . Per manager, facility is displaying fresh meat and chicken for customers.


- Observed cut chicken parts (breast, leg, thigh and wing) holding temperature is 41*F and looks good. No discoloration was noted.
- Observed about 7 pounds of discolored meat inside walk in freezer. Discarded voluntarily.

Routine inspection
- Observed prep sink provided with hot water at 120*F.
- Bleach sanitizer provided.
- Hand sink supplied and accessible.

Observed the 3 comp sink provided with hot water at 112*F. Provide hot water at a minimum temperature of 120 *F at all times. Repair or replace water heater. Comply by 6/9/2021. Re-inspection will be conducted on 7/22/2021.

Observed flies inside the facility's service and meat cutting areas.
- Please open back door only during garbage disposal or supplies delivery to prevent flies from entering into the facility.

Observed flies on garbage inside uncovered dumpster. Please cover dumpster at all times and keep the dumpster clean to prevent flies from accessing and inhabiting the garbage.

Facility has offering outdoor and take out service; dine in has been closed.
• Observed employees were wearing face coverings.
• Observed physical distancing and COVID-19 signs posted.
• Per manager, high touch areas are sanitized evey 30 minutes.
• Observed hand sanitizer provided at entry and point of sale.

Observed prep sink inside receiving room and 3 comp sink in the kitchen produced hot water at 110*F. Prep and ware washing sinks must be provided with hot water at a minimum temperature of 120*F. Comply by 12/10/2020.
Use 3 conmp sink located at dining area to wask-rinse and sanitize utensils and equipments until hot water issue around the kitchen has fixed.
Reinspection will be conducted on 12/14/2020.

Observed empty soap dispenser at hand sink in the kitchen. Corrected during inspection.

This is a revisit/follow-up inspection on complaint response report (CO0024384) conducted on 10/27/20.

- dumpster is well covered and 1-2 flies are observed around it.
- counter tops and shelves in food serving area are clean and flies were not observed.

- Please close back door after delivery to prevent flies from entering into the facility.
- Please clean outer side of the dumpster as necessary.

Covid-19 Guidelines

Per facility's manager, facility has no plan to reopen dine in soon but serves hot ready to eat food/togo.
All employees working in the kitchen/serving area are wear mask.
Please tape markings on the floor 6 feet apart between customers. Observed a lot of customers line up less than 6 feet almost touching with each other!
Please place signs in rest room doors stating one customer at a time; tape markings have been placed on the floor at 6 feet intervals for 3
Facility has digital menu.
Physical distancing and safe dining posters posted.
please provide entry table with hand sanitizer.

Observed hot holding for carnitas 120*F, mole 112*F, chicken 116*F, beef tongue 116*F & pastor 120*F. Chicken discarded voluntarily and rest food items reheated and temp probed >135*F.

Observed dust in area around fans inside walk in cooler. Clean ASAP.

Observed meat stored in large quantities and in areas around and above fans. in walk in cooler and walk in freezers. Please store meat in small quantities in a container and clear area around fans in walk in cooler and walk in freezer.

Observed different items stored von the floor inside dry storage area. Please arrange items in dry storage area properly and store 6 inches off the ground.
