1.) Observed several reach-in refrigeration units lacking mobile thermometers. Please provide mobile thermometers for the reach-in refrigeration units.

Note: Discussed with manager on digital thermometers on refrigeration unit can potentially give an incorrect reading and to have mobile thermometers available to know units are working properly.

1.) Observed Atosa refrigerator ambient temperature at 52°F. Please correct maintain 41°F or below.

2.) Observed cooked shreded chicken, tomato, beans, soap in Atosa refrigeration unit reading at 46°F. Several items: beans, soap were overstocked in their tubs. Please turn down temperature or have unit serviced to hold temp at 41°F or below. Discontinue practice of stocking foods above the "food line" in the tubs. .

REPEAT VIOLATION

1.) Observed no sanitizer bucket in facility. Provide a sanitizer bucket at 100ppm chlorine or 200ppm quaternary ammonia. Employee made new sanitizer bucket while inspector was on site. Recorded new bucket at 100 ppm chlorine.

Inspector discussed with employee and manager on getting correct chlorine to water ratio and the importance of having sanitizer buckets available during hours of operation.

• Per Plan, high touch areas are sanitized hourly.
• Facility has reduced the seating capacity of the onsite dining areas to provide a minimum of 6 foot physical distancing.
• Observed hand sanitizer provided at entrance to facility.
• Employees have been trained on the contents of Plan. Training is documented.

Sanitizer bucket at cookline observed at less than 100ppm cholrine concentration. Observed bucket filled with sanitizer solution of 100ppm chlorine at time of inspection.

Observed cold holding at front and back refrigerators at 47*F. Cold holding must be at or below 41*F. Comply by 2/26/2020.
