Observed no hot water provided to the handwashing sink in the bakery department. Note: point of use water heater next to handsink was unplugged. Water heater was plugged in and warm water at 105*F was provided. Make sure water heater is plugged in/handsink is provided with warm water at all times. Corrected on site.

Observed multi foods in the hot holding unit in the deli probed from 115-125*F. Hot holding must be maintained at 135*F. Turn up temperature on unit. Provide thermometer in unit. Note: foods probed at less then 130*F were voluntarily discarded at the time of inspection.

Observed mac and cheese at 90*F in hot holding unit. See violation 11.

Observed mac and cheese in hot holding unit at 90*F. Per employee, food is heated in the microwave and then placed in the holding unit. When reheating food must be RAPIDLY heated to a minimum of 165*F within 2 hours and then held at 135*F. If using a microwave to reheat food, be sure to stir the product and verify the temperature has reached 165*F before placing in holding unit. Note: mac and cheese voluntarily discarded at the time of inspection.
