Observed front of ice machine to have mold growth in butcher prep area. Sanitize and clean affected area. Mold growth has not direct contact with ice within the machine.

Observed light cover to be missing from a light in the produce prep area. Replace missing cover.

1. Observed chipping in cement flooring in walk-in Meat freezer. Repair flooring at next major renovation. 2. Observed missing drywall at entry way to the back of house produce area. Repair wall.

Observed loose seal between ceiling panels in walk-in freezer of the bakery. Repair seal to prevent moisture damage.

Observed two 1- liter jugs of orange juice resting on floor of walk-in refrigerator. Keep all food items at least 6 inches off the ground. CORRECTED ON SITE.

Observed 1 dented can of Lindsey, large, black ripe pitted olives. All canned goods shall be free of dents to prevent possible contamination and/or bacteria growth. CORRECTED ON SITE.

Observed calcium build up on vent guard in produce reach-in. Clean affected area.

1. Observed mold growth on the ceiling of the dairy walk-in unit. Clean and sanitize the affected areas. 2. Observed a light without a shatter proof covering in the deli butcher area. A service order is shown to be open for the cover. 3. Observed hard-water damage on the shelving unit of herb produce. Repair or replace shelves.

No sanitizer buckets were set up in bakery area during time of inspection. Food prep areas must have a sanitizer container for sanitizer rags set up at start of each day and keep sanitizer changed every four hours or when needed. CORRECTED ON SITE.

Observed a mound of trash by the trash compactor, compactor has no power and a service order is shown to be currently out for the unit.

1. Observed helium tanks unchained in the back produce room. All tanks shall be chained down to prevent possible injury. CORRECTED ON SITE. 2. Observed mold build-up on the baffle in the ice machine. Clean and sanitize. 3. Observed food and debris build-up on shelving in the cheese produce cooler. Clean and sanitize. 4. Observed dust and debris build-up on fan guards in the deli walk-in cooler. Clean and sanitize.
