Routine Inspection Observations:
Hot water from the 3 comp sink at 120F
Warm water from hand sink at 100F

Time as a public health control is used for assembly line items like tomatoes, cheese, and mayonnaise.
Verified Food Safety Manager certification. Note that per facility, food safety training for all other food handlers is provided internally rather than each employee obtaining a 3 year food handler card. Observed documentation electronically of training.

Note: Failure to correct violations may result in additional inspection with penalty re-inspection fee of $398 and/or Yellow Placard.

This division last conducted a COVID-19 inspection on 6/5/2020. Facility is currently offering food service at drive through only which is approved under Placer County’s current placement on the California Blueprint for a Safer Economy (purple tier). The doors are currently closed to the public, so the indoor dining area is closed. MAJOR VIOLATION

1) The men's employee restroom hand wash sink faucet does not allow for adequate hand washing of both hands together. Hot water is only available if the push handle is kept pressed down, resulting in only one hand being washed at a time. In addition, this mechanical push style faucet should not be used in a food facility as it is difficult to adjust the temperature. Replace the men's restroom faucet with a lever type that allows for adequate hand washing with warm water for 20 seconds

2) The paper towel dispenser to the only kitchen hand wash sink was empty at time of inspection. Manager corrected on site.

The concentration of sanitizer in wiping cloth buckets was less than 150ppm. Manager corrected on site by replacing the sanitizer buckets.

Observed twist to open employee water bottles and a can energy drink stored on and next to food intended for customers in the walk in refrigerator. Store all employee personal items separately from customer food items. Discontinue drinking from twist to open bottled water and cans. Transfer these items to lidded cups with straws.

The food preparation sink in the warewashing room has a leak at the drainline/sink connection. Repair to be free from leaks.

Per manager, only 1 employee is allowed to break at a time.
Menu on the board only.
Covid-19 poster and social distancing protocol posted at the front entrance.

10/15/2019: Routine Inspection

Observed health permit posted in the office. Must post health permit in a the front where its visible to the public.

A) Observed gasket on 2 door freezer next to the deep fryer in disrepair. Repair/replace.
B) Observed dust build up on fan guard in the 2 door freezer next to the deep fryer. Keep fan guards clean.

A) Observed food debris and standing water on floors under equipment and racks throughout the facility. Keep floors clean.

B) Observed missing and cracked floor tiles, cove base and missing floor grout in the front service, cook area, walk in freezer, back door, warewashing area and ice machine. Repair/ replace floor tiles by 04/15/2020. Plans must be submitted to PCEH if not replacing with like for like.
