Observed mold build-up on the inside of the ice machine. All equipment shall be kept clean and sanitized. Drain ice, clean and sanitize the unit.

MAJOR VIOLATION: Observed rodent droppings throughout the facility: - Liquor storage room - On soda syrups boxes - Dry storage room. All food facilities shall be kept free of vermin and pests. Remove all rodent droppings. Clean and sanitize all food prep and food contact surfaces. Spoke with pest control technician (Brilliant Pest Control). Company took over the facility within the last month and are actively baiting and trapping. The technician will do a follow up visit today. Follow all recommendations of pest control technician. Seal all holes, gaps, and openings that may be allowing entrance of vermin (Front and side doors). Failure to comply may result in a red placard and/or a re-inspection fee. A re-inspection shall be conducted on, or around, 12/27/2024.

Observed mold build-up in the walk-in keg cooler. Clean keg cooler. Observed debris build-up in some hard to reach places on the cook line. All equipment shall be kept clean. Have thorough cleaning have hard to reach areas.

Observed the salad cold holding unit at the waiter station with an internal temperature of 50F. All cold holding shall be at 41F and below. Have unit serviced to provide proper cold holding temperatures. All items were moved to the walk-in cooler to return to proper cold holding temperatures. An ice bath will be used for items on top until the unit is serviced.

Observed grime build-up on the inside of the soda spray nozzles at the bar. All equipment shall be kept clean and sanitized. CORRECTED ON SITE.

Observed the ware wash machine in the kitchen leave a residual sanitizer of 0ppm Chlorine. Ware wash machines shall leave a sanitizer residual of 50ppm Chlorine. Correct immediately. Use the 3-compartment sink for washing dishes until ware wash machine is working properly. Observed mold build-up in the ice machines. Equipment shall be kept clean and sanitized. Drain ice. Clean and sanitize units. A re-inspection shall be conducted on, or around, 7/20/2023.

Observed a bean mixture prepared from canned ingredients not cooled down to 41° F within four hours. MAJOR VIOLATION: Potentially hazardous food shall be rapidly cooled down from room temperature to 41° F within 2 hours. Item was voluntarily discarded at time of inspection. CORRECTED ON SITE.

Observed the ware wash machine at the bar produce a sanitizer residual of 0ppm Chlorine. Mechanical ware washing shall provide a sanitizer residual of 50ppm Chlorine. Correct immediately. All dishes shall be washed in the kitchen ware wash machine until corrected.

MAJOR VIOLATION: Observed chicken held in the steam table with an internal temperature of 122° F. All hot holding shall be at 135° F and above. Chicken was reheated on the grill. CORRECTED ON SITE. Observed hard boiled eggs with an internal temperature of 48° F. All cold holding shall be at 41° F and below. Eggs were placed in ice to quickly return to proper cold holding temperatures. CORRECTED ON SITE.
