Observed hot holding for minestrone soup probed at 108 *F. Hold holding must be at or above 135*F at all times. Corrected on site by reheating the food at 165*F.

Observed cold holding at service station refrigerator probed at 57*F. Cold holding must be at or below 41*F at all times. Corrected by voluntarily discarding food items from the refrigeration unit. Please fix the refrigerator ASAP and call 510-488-0399 for checking the cold holding temperature.

Observed dish wash machine in bar area produces 0ppm residual chlorine. Dish wash machine must be produce 50 ppm residual chlorine. Corrected on site.

Repair leakage at 3 comp sink ASAP.

Observed low temperature dish washer produces 0 ppm chlorine residue. Dish wash machine must produce 50 ppm residual chlorine.
During inspection facility called ECOLAB for repair/maintenance of the dish washer. Facility has 3 comp sink with quat sanitizer as a backup. Sanitize dishes @ 3 comp sink using 200 ppm quats sanitizer. Re-inspection will be conducted on 12/4/2019.

Observed dirt/grime inside ice machine and soda dispenser guns in the bar. Deep clean ASAP. Comply by 12/3/2019.
