Observed hot water in facility at 116*F. Hot water must be supplied at 120*F at all sinks except hand wash sinks. Please turn up hot water heater so water is produced at 120*F.

Observed deterioration of cabinets and shelves throughout the facility. Observed bare wood, bare wood absorbs moisture and harbors bacteria. Observed paint chipping from cabinetry, paint chips can create physical contamination hazard.
Cabinetry will require replacment with a durable, smooth, cleanable, nonabsorbent, commercial grade material in the future.

Observed sanitizer bucket at 200 ppm chlorine. Higher concentrations can leave a residual on equipment. Maintain at 100 ppm.

Observed drainage pipe from the espresso machine below the rim of the floor sink. Equipment that discharges liquid waste shall discharge through an airgap into a floor sink. Shorten/adjust drainage pipes so there is at least a one inch air gap between the waste pipe and the rim of the floor sink.

Observed sanitizer bucket at 0 ppm chlorine. Maintain at 100 ppm chlorine. Change sanitizer every four hours or as often as needed.

Observed container of strawberries thawing at room temp on shelf above sink. Use only one of four approved thawing methods:
1) Inside refrigeration
2) As part of the cooking process
3) Under cool running water (70° F) for no longer than two hours
4) In a microwave, provided food is immediately prepared after thawing

Facility does not currently have a certified Food Safety Manager. Have at least one employee acquire a valid Food Safety Manager certificate ASAP.

Observed debris and residue inside the microwave. Please clean and sanitize.

Observed significant splatter on main window blind. Facilities shall be kept clean and all surfaces shall be washable.
Wash or replace window blind.

Observed several containers of sliced fruit used for smoothies sitting on counter probed at 65-67*F. Keep all cut fruit (fresh or pre-frozen) at 41*F or below.
