Notes:
- Observed hot water able to reach and maintain a temperature of 120*F at all three compartment sinks throughout facility.
- Observed all hand washing sinks throughout facility to be fully stocked and able to reach and maintain a temperature of 100*F.
- Observed all reach-in cold holding units in facility to be under 41*F.
- Observed hot holding in deli area to have internal temperatures over 135*F.
- Observed al food items stored consistently 6 inches off the floor.

Flooring in the deli, bakery, and butcher area has been repaired. Submit a plan check application to Placer County Environmental Health with spec sheets to retroactively approve and pay for the work that has been done. Observed snap-trap in back bakery area. Obtain approved pest control traps for commercial facilities.

Observed fan gaurds in the following locations to have dust build up:
- Butcher prep area
- Produce walk-in
- Dairy walk-in

Clean affected areas to allow for better ventilation.

Observed debris in floor sinks of freezer aisle, clean affected areas.

Observed the following hot holding items to be out of temperature:
- (1) fried chicken wing: 125*F
- A container of grilled mango habanero chicken at 109-126*F
- A container of orange chicken at 109- 117*F

All hot holding items must be at or above 135*F. the items were voluntarily discarded.

All other food items in the hold holding unit were above 135*F. Service unit as needed.

Observed a hold in the wall at the back produce food prep area. Patch wall to prevent unwanted pests.

Observed deli sandwich cold-holding line to be above 41*F at 43*F and 45*F tomatoes. Temperature was turned down on site by maintenance. CORRECTED ON SITE.

Observed floor to be deteriorating in the following departments: Deli, bakery and meat/seafood prep areas. Repair flooring to prevent possible injury. Work order issued therefore CORRECTED ON SITE.

Observed boxes of the following expired foods:
1. Happy Baby Organics Banana, sweet potatoes, & Papayas (2) - dated 01Jan2024.
2. Organic Happy Tot Super Bellies Immune and digestive blend. (1) - dated 04Mar2024

Products were removed from shelving ASAP. Review expiration date checks with staff. CORRECTED ON SITE

Observed 2 thermometers in the facility to not be functioning. Replace/repair thermometers. Work order issued therefore CORRECTED ON SITE.

Observed grime build up on the dairy holding shelves. Clean and sanitize area.

Observed ware-wash machine in bakery area unable to reach 160*F, please use three compartment sink to sanitize dishes and utensils. A work order was created for dish washer.

1. Observed floor to be chipping in the bakery and seafood prep areas. Repair flooring to prevent possible injury.

2. Observed light to be set incorrectly in hot food prep area. Replace/repair light to prevent possible injury.

Observed 4 thermometers in the facility to not be functioning. Replace/repair thermometers.

Observed fan guards in the following areas to have significant dust build up: dairy back room refrigerator, produce back room refrigerator, and deli prep refrigerator. Clean affected areas.

Observed no thermometer in cold holding display case in deli area, please keep thermometers available in display case to monitor temperature. Corrected on site.


Observed dish washer in bakery area not reaching 160*F after 4 tries, please use three compartment sink to sanitize dishes and utensils. A work order was created for dish washer. Temperature records show dishwasher reached 160*F earlier in the morning.
