Notes:
- Observed hot water able to reach and maintain a temperature of 120*F at all three compartment sinks throughout facility.
- Observed all hand washing sinks throughout facility to be fully stocked and able to reach and maintain a temperature of 100*F.
- Observed all reach-in cold holding units in facility to be under 41*F.
- Observed hot holding in deli area to have internal temperatures over 135*F.
- Observed al food items stored consistently 6 inches off the floor.

Flooring in the deli, bakery, and butcher area has been repaired. Submit a plan check application to Placer County Environmental Health with spec sheets to retroactively approve and pay for the work that has been done. Sanitizer dispensers and spray bottles at 200ppm quat, test strips available
Dish washer in deli area at 160*F, please test dishwasher if not used after a few hours to make sure it's still keeping water temperature at 160*F.

Hot holding>135*F (hot held food items in front area display case are removed prior to 4 hours for quality purposes, time is written on containers)
Food Safety Manager Certificate current and available
