1) Upon inspection, the Big Dipper grease interceptor was not plugged in and operating per manufacturer specifications. Instructed manager to plug in the unit at time of inspection. Facility has the unit serviced once a month by a third party. Ensure the unit is checked for proper operation and follow all manufacturer specifications for use.

2) The 3 compartment sink faucet is leaking even when not in use. Repair the plumbing to be in good repair.

3) Repeated Violation - The flexible drain line for the soda machine is entering into the floor sink. Secure the drain line above the floor sink to provide a 1 inch air gap. Facility may secure to the PVC pipe in the same location.

Clean inside of all cabinets and cubbies throughout front preparation area to eliminate accumulated food debris.

The hand wash station by the 3 compartment sink is inoperable due to mall plumbing issues. The facility has a hand wash station at entrance between front and back areas that is reasonably close to the 3 compartment sink. As such, the violation is not being marked as a major violation.

Facility must have this hand wash station repaired and fully functional as soon as possible.

REPEATED VIOLATION

Some food handler cards are either expired or not present at store. Within 30 days, ensure all food handlers have valid status and maintain copies of food handler cards on site for review.

This division last conducted a COVID-19 inspection on 7/9/2020. Facility is currently offering food service for to-go only which is approved under Placer County’s current placement on the California Blueprint for a Safer Economy (purple tier). Indoor and outdoor dining tables are managed by Galleria mall management, and indoor tables are not provided at this time. 1. The shelf within the storage cabinet below the dough rolling counter is deteriorated in the back left corner can cannot be cleaned properly. Replace the shelf within this cabinet.

2. Clean the handles of the tall 2 door refrigerator in back room to eliminate food debris.

Clean the floors below the tall refrigerator and freezer in the back room, as well as below the front dough preparation counter in the corner.

Per manager, he just transferred to this store and needs to bring his Food Safety Manager Cert. In addition, due to staffing changes, current staff Food Handler Cards are not available. Ensure Food Handler Cards and a Food Safety Manager certification are available at the store for review within 30 days.
