1.)Observed no sanitizer bucket in food prep/cook line area. Provide a sanitizer bucket at 100ppm chlorine or 200ppm quaternary ammonia. Note: stand in supervisor made sanitizer bucket while inspector was on site; recorded at 200ppm quat.

2.) Observed no sanitizer test strips on site for quat or chlorine. Please obtain sanitizer test strips ASAP.

3.) Observed warewash machine at 0ppm chlorine. Have unit serviced to produce 50ppm chlorine during rinse cycle.

NOTE: Dishwasher took several attempts to produce 160 ° F rinse temperature. Please service dishwasher to reach 160 ° F in a quicker manner.


1.) Observed significant dust accumulation on fan covers for walk-in coolers. Please maintain fan covers to prevent significant dust accumulation.

Hot water temperature at three compartment sink 116*. Raise to at least 120*. Repeat violation.

Final rinse temperature of dishwasher was observed at a maximum of 155* at plate surface after running multiple times. Raise temperature to at least 160*. Do not use for sanitizing of dishes until temperature is adjusted. Use three compartment sink to sanitize dishes.
