REPEAT VIOLATION

1.) Observed significant food debris accumulating on floor by cashier area and pressurized cylinder. Please maintain floors to prevent food debris accumulation.

1.) Observed employee pick up item off floor and resume food prepping. Please train employee proper hand hygiene practices. Note: Inspector talked to employee about washing hands when out of food prep and cross contamination.

1.)Observed no soap at employee restroom. Please resupply soap dispenser ASAP, create a routine schedule to inspect bathrooms for cleanliness, paper towel and soap supply.

2.) Observed paper towels dispenser broken for hand wash sink by dish washing machine. Please replace/repair paper towel dispenser ASAP.

1.) Observed two pressurized cylinders by employee entrance and one pressurized cylinder by cashier area (CO2) not secured to a rigid structure. Please secure all pressurized cylinders to a rigid structure ASAP.

-Observed debris and grime build up through out the facility, including walk-in cooler. Please clean to prevent debris and grime build up.

Current Food Safety Manager's Certificate is expired. Acquire new certification ASAP.

-Observed dust and rust build up on racks for toilet paper. Toilet paper observed with rust stains. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Clean as often as needed to preclude accumulation of soil residues.

-Observed unsecured co2 canister by soda refrigerator. Properly secure co2 canister to prevent tipping.

-Observed dust build up on walk in cooler fan covers. Please clean fan covers to prevent dust build up.
-Observed dust build up for vent covers in both restrooms. Please clean vent covers to prevent dust build up.

Observed raw turkey and beef stored over produce in the walk-in cooler. Store foods in refrigeration units according to final cook temperature (highest on the bottom shelves). See Below:

Sandwich prep refrigerator observed at 50*. Potentially hazardous foods (meats, cheese, etc.) were moved into walk in refrigerator. Items that had been in refrigerator >3 hours were discarded. Do not use refrigerator to store any potentially hazardous foods until it has been repaired and can maintain a temperature <41*. Call for reinspection once refrigerator is at proper temperature.

Sugar packets, drink lids and jar of peppers observed stored on shelf under cleaning supplies. Foods were moved during inspection. Keep foods stored properly separated from cleaning chemicals.

Clean shelving in walk in refrigerator.

Clean flooring throughout kitchen, especially under and behind equipment and shelving.

Raw eggs stored on shelf over tomatoes. Eggs were moved during inspection. Keep eggs stored below or properly separated from other foods.

Properly secure co2 canister to prevent tipping.

1. Clean backs of handles on refrigerators.
2. Clean meat slicer. Dried on food debris was observed.
