1. Observed two ripped gaskets on cold-holding doors at the cook-line. Replace gaskets. 2. Observed that fire suppression system is over due for an inspection, last done 03/2023. Contact local fire department to schedule inspection.

- Observed all hand washing stations to be fully equipped and able to reach 100*F.
- Observed ware-washing station to be at 50 ppm chlorine.

- Observed cooking temperatures to be above 165*F.
- Observed all cold-holding stations to be at or under 41*F.

Observed mold on baffle inside ice machine. Drain ice, clean and sanitize inside ice machine.

1. Observed open containers on in the cold holding units at the cook line. Keep all food items covered. CORRECTED ON SITE. 2. Observed dusty fan blowing directly on noodles to cool them. Discontinue use of dusty fan, store food items in walk-in refrigerator to cool foods. CORRECTED ON SITE.
