 Minor - 7

1) Observed significant food debris and dust accumulation on food racks in walk-in cooler. Please maintain food racks to prevent food debris and dust accumulation.
2) Observed significant grime accumulation on ice dispenser for soda machine. Please maintain ice dispenser to prevent accumulation of grime.

1) Observed pizza dough in walk-in cooler with no cover, rack above dough observed with significant dust and food debris accumulation. Please clean racks and cover pizza dough to prevent overhead contamination.

1) Observed no chlorine test strips for dish washing machine. Chlorine test strips shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing.

1) Observed significant dust accumulation on cooling fans in walk-in cooler. Please maintain fans to prevent dust accumulation.

1) Observed significant flour and dust accumulation on floors in 3-comp sink area. Please maintain floors to prevent flour and dust accumulation.

2) Observed significant damage on wall adjacent to dough mixer. Please maintain wall to prevent damage and potential cracks or holes for appearing. Per manager the wall is being damaged from dough mixers handle.

1) Observed warewash machine at 200ppm chlorine. Have unit serviced to produce 50ppm chlorine during rinse cycle.

In the meantime, sanitize all dishes and utensils in the 3-compartment sink.

REPEAT VIOLATION

1) Facility was unable to provide proof of certified Food Safety Manager. Have at least one employee acquire a valid Food Safety Manager certificate ASAP.

12/17/2020: Routine Inspection

Observed cooked chicken wings at 75F cooling at room temperature for approximately 3 hours. Chicken was moved to refrigerator to finish cooling. Use proper cooling methods for potentially hazardous food.

Observed some employee food handler cards expired. No food safety manager certificate observed at time of inspection. Have at minimum one person-in-charge obtain a food safety manager certificate. Update records by January 31, 2021. Email proof of compliance to amcleskey@placer.ca.gov.

06/25/2020: Routine Inspection

 Minor - 1

Pizza prep refrigerator observed at 48*. Lower temperature to 41* or below. If temperature cannot be maintained, have repaired and do not use to store any potentially hazardous foods until proper temperature can be maintained.

Dishwasher had no sanitizer observed after final rinse. Repair was called for during inspection. Three compartment sink was properly set up during inspection, sanitizer was 200+ ppm quat ammonium. Use three compartment sink to wash, rinse and sanitize dishes until dishwasher has been repaired. Call for reinspection once dishwasher is repaired.

Clean floors and walls throughout kitchen. Especially under and behind equipment.

1. Clean backs of handles on refrigeration units.
2. Clean shelves in walk in refrigerator.
3. Clean ice dispenser on soda machine.
4. Clean inside of reach in refrigerators.

Provide food safety certification for one employee, and current food handler cards for all employees. Comply within 60 days. If certificates are not provided, reinspection fee and compliance agreement may be required.
