-Observed door of prep top refrigeration unit across from fryer to be held on with duct tape. All equipment must be fully operative and in good repair. Per Chef, a new unit is on order. Correct ASAP.

-Observed no thermometers in refrigeration units on the prep line. Provide thermometers in the warmest part of each unit where they are easily visible. Correct ASAP.

-Observed salad prep refrigerator ambient temperature of 48*F. Maintain at 41*F or below. Note: all PHF items were moved to the walk-in. Mitigated during inspection.

-Observed items (raw chicken, raw hamburger) in grill prep top refrigerator probed at 46*-47*F . Maintain at 41*F or below. Note: All items were placed in an ice bath to bring cold holding temperature to 41*F. Mitigated during inspection.

-Observed items in top holding on the prep line across from the fryer probed at 44*F. Unit has a broken door (see item#35) In the meantime, turn down temperature and keep foods covered to help maintain cold temperatures throughout.

-Observed reach in refrigerator unit holding bar supplies in liquor storage/ice machine room to be ambient temperature of 51*. Do not store PHF in unit until temperature is 41*F or below.

Have all units serviced or turn down temperature to hold at 41*F or below.

1) Facility is very clean and well organized.
2) Cold holdings in compliance (<41°F).
3) Hot holdings in compliance (>135°F).
4) Food Manager's Cert & Food Handler cards up to date.
5) Sanitizer buckets in compliance.
6) Dishwasher in compliance (50ppm chlorine rinse).

Observed no soap at prep area handwash sink. Correct ASAP.
