Observed scoops for both ice and chips to be resting on shelving, keep scoops stored in containers to prevent possible contamination.


Observed open container of carne in cold-holding at the cookline. Keep all food items covered when not in use. CORRECTED ON SITE.


Observed warewashing machine to be at 0 ppm chlorine. Shown that unit was just serviced this morning. After three runs, and priming the machine, the unit was still not dispensing chlorine. Service company was called during the inspection and test strips are available on site.

Have unit serviced to properly dispense chlorine. Mitigate violation by washing at the three compartment sink. Sink was already prepped on site.

Reach out to Placer County Environmental Health when the unit has been repaired.


Observed frozen raw meat, sealed, in bins on the ground de-thawing. Keep all food products at least 6 inches off the ground. De-thaw products under running water. CORRECTED ON SITE.

3rd REPEAT VIOLATION: Facility does not currently have a certified Food Safety Manager. Have at least one employee acquire a valid Food Safety Manager certificate ASAP.

Observed that Food Handler Cards are available.

1. Observed walk-in refrigerator door is not sealing shut properly. Ambient temperature was observed to be at 40*F. Internal temperatures of several food items in the walk-in were observed to be under 41*F. Repair door to allow for proper seal.

2. Observed light in the walk-in refrigeration unit to be missing shatter proof cover. replace missing cover.

Observed cook line cold holding unit to be above 41*F. All potentially Hazardous foods must be below 41*F.

Space in cabinet holding was observed to have a thermometer reading 38*F. Ambient temperature read 40*F. Internal temperatures of food below were all below 41*F.

Cook-line lid was observed to be open and stay open when not in use. Train staff to close lid regularly to maintain temperature. The following temperatures were observed.

Pico De gallo: 45*F
Diced tomatoes: 44*F
Pickled jalapeņos: 45*F

Mitigate by keeping top lid closed when not in use.

REPEAT VIOLATION: Observed frozen meat blood on the floor of the freezer unit. Clean affected area.

REPEAT VIOLATION: Facility does not have a current Certified Food Safety Manager. Food facilities that prepare potentially hazardous foods must have, at minimum, one Certified Food Safety Manager on staff. Obtain current Food Safety Manager Certification by next inspection.

2. No food handler cards available on site. Have all staff whom prepare food for customers obtain a food handlers card on site by next inspection.
