COVID-19 Inspection
-Facility is currently offering food service for indoor dining. Indoor/outdoor dining tables are managed by Galleria mall management. This is in line with Placer County’s current placement on the California Blueprint for a Safer Economy (red tier). Facility should frequent the following website:

***Facility does not have a workplace specific COVID-19 plan. This plan is required prior to having guests take part in indoor dining. A template will be emailed to facility. Ensure the template is filled out and kept at the store for review. All employees must be trained in the plan.

-All employees observed wearing masks.
-Covid-19 sign posted requiring mask use.
-Sanitizer is available. Ensure the facility high touch points are sanitized frequently. Recommend every 30 minutes.
-Ensure hand sanitizer is also available for employee and customer use.
-Menu is on board.
-Plexiglass barrier at point of sale.
-Physical distancing markers on floor leading to point of sale.
-No customer self service.

Observed pizzas and calzones holding in the customer display at 108-115*F. Per owner, the food items are kept warm but not hot, and reheated in the oven when ordered. Owner states the pizzas are used up within 2 hours, but no current procedure is in place such as Time as a Public Health Control. Discussed with operator the use of Time as a Public Health Control whereby foods are marked with the time that they are placed and the time that they must be discarded (4 hours later).

Observed the concentration of quaternary ammonia sanitizer in the wiping cloth bucket at much greater than 500ppm. Owner corrected on site, maintain the sanitizer at 200ppm quaternary ammonia.

COVID-19 Guidelines
• Facility doing take out only. Per manager, indoor and outdoor dining tables are managed by Galleria Mall management. Observed dining tables spread 6ft apart.
• Observed employees wearing face coverings and gloves.
• Observed physical distancing and COVID-19 signs posted.
• Observed barriers installed at point of sale.
• Per manager, high touch areas are sanitized hourly.
• Observed hand sanitizer provided to employee.
• Observed disposable to-go containers being used only.
• All condiments are prepackaged.
• Disposable eating utensils are given to customer by employee.
• 6ft markings on the floor in front of point of sale.
• Observed soda fountain refill by employee using new cups only.
• Per manager, employees are required to do a wellness check prior to staring work.
• Digital menus are being used.
• Facility has not prepared and implemented a written Workplace Specific Plan. Workplace Specific Plan template emailed to operator. Please email completed plan to by 7/8/2020.

Observed 3 employee food handler cards expired. Have employee renew their food handler cards immediately.

Observed quat sanitizer from the 3 comp sink and sanitizer bucket at 0ppm. Employees have been using the sanitizer bucket and 3 comp sanitizer to clean prep surfaces and dishes all morning.
Manager manually mixed quat sanitizer solution on site.
Maintain quat sanitizer at 200ppm. Repair/replace wall mounted sanitizer dispensing unit.

Observed hot water from the 3 comp sink at 117F.
Maintain hot water at 120F.

Observed employee open beverage stored above facilty food in the walk in cooler. Maintain employee beverage in a closed bottle or cup with lid and straw. Store employee food/beverage in designated area away from faciltiy food and prep surfaces.

A) Observed pizza and stromoli on the hot plate at 119F-120F. Manager voluntarily discarded these items on site.

B) Observed shredded cheese inside the pizza prep unit at 47F. Manager replaced shreded on site.

Maintain potentially hazardous food cold holding at <41F or hot holding at >135F.

Observed vinly wall above the walk in cooler replaced with a piece of raw wood. Shall paint the wood with semi-gloss paint or replace with vinyl wall piece.

Observed employee purse stored on top of facility food. Please store employee belongings in lockers or designated area away from facility food.

Observed vinyl wall above the walk in cooler replaced with a piece of wood. Please replace with vinyl wall. All floor, wall and ceiling in a food facility must be smooth, durable, non-absorbent and easily cleanable surfaces.

Observed condensate line from the front unit leaking. A container is used to catch the waste water. Repair leak immediately.
