Routine Inspection Observations:
Facility uses the Whole Foods dish machine and 3 compartment sink. Units checked and found operational today during inspection of whole foods.
Warm water at hand wash sink >100F
Sushi display case, cold holding preparation table, and rear storage refrigerator/freezer observed at <41F
Verified HACCP plan for sushi rice (white and brown) was available and implemented. Observed pH logs and guidance. The pH is tested with each batch. Observed representative demonstrate pH reading of in use sushi rice, pH measured at approximately 3.5.
Quaternary ammonia sanitizer from the wiping cloth bucket observed at 200ppm
All food employees at this location hold Food Safety Manager certifications, verified on site.

Clean the condenser fan grate inside of the refrigeration unit below the sushi preparation table to remove accumulated debris. Observed recently made sushi rolls cooling uncovered below the dusty fan grate.

• Facility does not have dine in area. Facility makes prepackaged sushi to go only.
• Observed employee wearing face covering and gloves.
• COVID-19 or physical distancing signs were posted in facility.
• Physical barriers were provided at the register.
• Per manager, high touch areas are sanitized every regularly throughout the day.
• Hand sanitizer is available at entrance to facility.
• 6ft markings and flow arrows placed on the floor.
• Restroom available for customer use.

Failure to correct violations may result in a yellow placard and/or chargeable re-inspection.

Observed ambient temperature in the sushi cold display case at 44F-45F. Manager put work order for this unit on site. Please relocate all food items to another working unit immediately if this unit does not drop to 41F or below.

Observed 0ppm of quat sanitizer from the sanitizer bucket. Provide quat sanitizer from sanitizer bucket at 200ppm.

Observed incomplete pH log for todays sushi rice. Make sure employee follows written HACCP plan at all time.
Employee immediately checked the pH level for todays sushi rice and logged it on site. pH level for the sushi rice was at 3.74.
