MAJOR VIOLATION
1) Observed an open container of yogurt stored in a holster at the top of the ice cream scooping freezer holding at 51*F. Discontinue the practice of storing the yogurt at the top of the unit. Yogurt is a potentially hazardous food that must be kept at or below 41*F.

2) The walk in freezer is not holding cold enough to maintain frozen foods frozen. Facility is already attempting to repair the unit. Continue repairing to maintain frozen foods properly frozen.

The drain line for the food preparation sink has come off resulting in water splashing onto the floor when the sink is in use. Re-secure the drain line to ensure water is disposed of into the sewer.

Ensure mops are hung up to air dry. Observed soiled wet mop sitting in mop sink rather than air drying.

Observed several fruit flies at mop sink. Food debris is present in the mop sink, and a wet mop left in the sink rather than being hung up to air dry. Please clean the mop sink and eliminate flies. Using bleach in the sink and drain can be useful in reducing fly activity.

Provide an ambient thermometer to the below counter reach in #2 refrigerator.

This division last conducted a COVID-19 inspection on 7/9/2020. Facility is currently offering food service for to-go only which is approved under Placer Countyís current placement on the California Blueprint for a Safer Economy (purple tier). Indoor and outdoor dining tables are managed by Galleria mall management, and indoor tables are not provided at this time. COVID-19 Guidelines
• Facility is only doing take out. There are no tables for dine in. The indoor dining tables outside of the facility is managed by the Galleria mall.
• Observed employees wearing face coverings.
• Observed no physical distancing and COVID-19 signs posted. Please post COVID19 signs by entrance. COVID19 signs emailed to operator.
• Observed barriers installed at point of sale.
• Per manager, high touch areas are sanitized every 15 minute.
• Observed 6 ft markings on the floor throughout the facility. Observed an employee by the front door monitoring the customer entering and existing the facility.
• Observed hand sanitizer provided at entrance to facility.
• Per manager, all employees are required to go through an online COVID19 training.
• Digital menus are being used.
• Observed facility restroom closed to the public.
• Observed COVID19 protocols posted by the front door.
• Observed all prepackaged items put behind counters and a sign posted by the cold display case informing customer to ask employee for cold prepackaged items.

Observed the floors inside the walk in freezer really sticky and lots of standing water by the mop sink and in the prep area. Maintain floors clean immeidately.

Observed chlorine sanitizer from the sanitizer bucket at 50ppm. Maintain chlorine sanitizer at 100ppm.
