Re-inspection on 9/29/2021

Onsite to follow-up on violations cited on: 9/09/2021.

Comments:

Observed no hot water at the hand wash sink next to slicer and prep sink. Cold water pressure is very low and intermittent. Employees are using prep sink to wash hands.
Observed plumbing leak under prep sink dripping into plastic bucket.
Observed liquid waste from beer tap drip trough draining into prep sink at front counter. Sink cannot be used as a prep sink due to discharge of liquid waste into sink.


A penalty re-inspection will be conducted on or about Oct 20, 2021. A penalty re-inspection fee in the amount of $410.00 will be charged at that time to the facility and failure to comply with corrections will result in another re-inspection and an additional re-inspection fee.

(c) Handwashing facilities shall be equipped to provide warm water under pressure for a minimum of 15 seconds through a mixing valve or combination faucet. If the temperature of
water provided to a handwashing sink is not readily adjustable at the faucet, the temperature of the water shall be at least 100°F, but not greater than 108°F.

(a) A handwashing facility shall be clean, unobstructed, and accessible at all times for employee use.
(b) A handwashing facility shall not be used for purposes other than handwashing.
(c) Employees shall not clean their hands in a sink used for food preparation, warewashing, or in a service sink or a curbed cleaning facility used for the disposal of mop water and similar liquid waste.

Observed no hot water at hand wash sink. Please supply hot water to all hand wash sinks between 100-108°F. (see #6)

REPEAT VIOLATION - Observed plumbing leak under prep sink dripping into plastic bucket. All plumbing fixtures has be kept fully operataive and in good repair. Correct by Sept. 27, 2021.

-Observed debris build-up in the cracks and crevices of the slicer. Please break down unit, clean and sanitize.

Observed no hot water at the hand wash sink next to employee restroom. Water pressure is very low. Hot water must be supplied to all hand wash sinks between 100-108°F. Correct by Sept. 27, 2021.

Facility does not have a current Certified Food Safety Manager. Food facilities that prepare potentially hazardous foods must have, at minimum, one Certified Food Safety Manager on staff. Obtain current Food Safety Manager Certification by Oct. 9, 2021.

REPEAT VIOLATION - No sanitizer buckets were set up and empty buckets were sitting on counters. Must have a sanitizer container for sanitizer rags set up at start of each day and keep sanitizer changed every four hours or when needed.
Corrected during inspection.

Observed container of sliced cheese double stacked on top of containers in prep top unit. Cheese was probed at 50*F. All PHF must be held at 41*F or below. Discontinue the practice of double stacking containers in the top holding.

Observed liquid waste from beer tap drip trough draining into prep sink.
All equipment that discharges liquid waste shall be drained by means of indirect waste pipes, and all wastes drained by them shall discharge through an airgap into a floor sink or other approved type of receptor.
