-Observed employees not wearing masks. Please ensure food employees wear masks until State guidelines direct otherwise.
-Placer County is currently in the orange tier which allows indoor dining at 50% capacity. Please monitor to be in compliance.
-Ensure employees check for COVID-19 symptoms prior to working.
-Ensure customer high touch points are sanitized frequently, recommend every 30 minutes.

Repeat Violation

Food handler cards were not available on site. Per manager, all employees have taken courses. Ensure food handler cards are available on site at all times. Please email copies to aevans@placer.ca.gov.

1) Observed the concentration of sanitizer (quaternary ammonia) in the wiping cloth bucket at greater than 400ppm. Manager adjusted concentration to 200ppm, correcting the issue.

2) Sanitizer (quaternary ammonia) test strips were not available at time of inspection. Please provide.

Clean inside the ice machine (sides and lid surface) to eliminate debris from nearby drink making.

Raise the drain line for the cappuccino and ice machines to provide a 1 inch air gap above the floor sink.

Note: California has in place stay at home orders in addition to Placer County currently in the "purple" tier for COVID19 guidance. Restaurants are asked to provide take-out orders only and not to offer indoor dining.

Reminders:
The food preparation portion of the facility is closed due to no hot water. Facility may only sell prepackaged food and beverage until hot water of a minimum of 110F is restored, buy hot water of 120F is required from the faucet. Recommend upgrading water heater to a bigger size.
A re-inspection will be conducted by 10/17/19 to follow up on violation #21. Failure to correct violation may result in a yellow placard and/ or chargeable re-inspection of $388.00.

Observed no paper towel inside the paper towel dispenser. There was a roll of paper towel stored on top of the dispenser. Please keep paper towels inside the dispenser.

Observed no thermometer inside both True under counter refrigerator. Provide.

Observed no quat test strip on site. Provide.

Observed no manager food safety certificate and employee food handler cards on site.
Provide manager food safety certificate within 60 days and employee food handler cards within 30 days.

A) Health permit was not posted in a conspicuous location in the facility. Provide.

B) A copy of the last routine inspection report was not available for review. Provide.

Inspection Memo:

This is a re-inspection to follow up on violation #21 noted on routine inspection 10/15/19.

Observation:
Hot water from the 3 comp sink now measured at 118F and warm water from hand sink now measured at 100F. Maintain hot water from the 3 comp sink at 120F.

Make sure all other violation noted on the routine inspection is corrected by 04/15/2020.
