Due to Covid 19, only the first 23 items on the checklist were inspected.

Provide a policy and procedure for foods being held out of temperature immediately.

All foods being held out of temperature must be discarded at the end of the shift, no more than 4 hours after being taken from cold holding units.

Facility is holding foods out at the bar and staff is serving customers.

Provide better barrier between food and customers.

Observed CDC guidelines being implemented.

07/15/2020: Routine Inspection
Violations:Major - 0
 Minor - 3

First Crescor refrigeration unit observed at 56*F ambient temperature and foods probed at 53*F - 49*F. Potentially hazardous foods below 50*F were moved to another refrigeration unit. Slaw was discarded at the time of the inspection.
Middle Crescor refrigeration unit was observed at 50*F and foods probed at 48*F. All potentially hazardous foods were moved to another refrigeration unit at the time of the inspection.
Refrain from using refrigeration units until that can hold and maintain foods at 41*F or below.
Note: recommend conducting daily temperature logs.

Provide single-use paper towels at kitchen hand wash station. Corrected.

Observed foods being held in Cambros by the BBQ in the low 50s and salads being held at room temperature for lunch. All potentially hazardous foods not maintained at proper temperatures must have a policy and procedure written and implemented and all foods discarded at the end of the shift, not more than 4 hours. Provide this office with a copy of the written procedures no later than 7/20/2020.
