Observed no Food Safety Manager Certificate or Food Handler Cards, owner stated they are working on getting staff take courses and they will have cards by next insepction.

Observed drain lines for three comp sink and prep sink in kitchen area without air gap. Please make sure drain lines have air gap over floor sink.

Facility has been closed due to water damage, facility has opened on limited menu and is working on getting a hood installed. Spoke to owner about having plans submitted and reviewed by health dept, a plan review application will be given to owner. Owner stated architect/engineer will submit plans.
Menu currently consists of pizza, flat bread and salads
New flooring has been installed
Dry storage area in back is clean and organized
Hand sinks in kitchen and bathroom have hot water above 100*F, soap and paper towel dispensers.
Bar size three comp sink has hot water above 120*F in bar area.
Cold holding<41*F
Dishwasher is high temp, above 160*F
Two compartment prep sink in kitchen area will be used for washing of fruit and vegetables
