No sanitizer residual was detected at dishwasher after running multiple times. Have repaired so that residual is 50 ppm chlorine. Sanitize dishes in three compartment sink until repair has been made.

Hot water temperature at three compartment sink observed at 113*. Raise to at least 120*.

* Food safety manager certificate required for one employee within 60 days of opening. School kitchen has been open less than one month. Provide certificate to Environmental Health within 60 days.
* Sanitizer from dispenser is too strong (4-500 ppm) adjust dispenser to proper concentration.
