All hand washing facilities shall be fully stocked with paper towel in a wall mounted dispenser.

Observed grime build-up on walls underneath counters in front kitchen area.
Observed debris build-up underneath counters and shelves in back room.
The floors, walls and ceilings of a food facility shall be clean and well maintained.

Observed employee skip sanitizing step of warewashing procedures.
When washing dishes manually an employee shall follow 3 steps: wash, rinse, sanitize.
Facility is using chlorine as sanitizer; dishes shall be in contact with a 100ppm chlorine solution for 30 seconds.

Observed no soap available to employees to wash hands.
Employees shall wash hands for at least 20 seconds with soap and warm water before working with food/beverages and as often as necessary.
Owner provided soap at time of inspection.

-Reminder: All employees should use the hand washing sinks for hand washing. Employees shall not clean their hands in a sink used for FOOD PREPARATION, WAREWASHING, or in a service sink used for the disposal of mop water and similar liquid waste.

-Reminder: The back door of the facility should be closed at all times to prevent pests/rodents from entering the facility.
