Observed: No records available or posted for Food Manager Certification.

Corrective Action: Each food facility shall have a Certified Food Safety Manager on staff. The Certified Food Safety Manager certificate shall be posted in the food facility.

Observed: Refrigeration unit holding at 46F. Contains dairy only.

Corrective Action: Refrigeration units shall maintain temperature of <41F. Dairy ok up to 45F. Cooler adjusted on site.

NOTE: Discontinue use of 3 compartment sink in clothing store as it does not reach a minimum temperature of 120F. Facility is permitted to use 3 compartment sink in Hacienda Del Lago. Any change of equipment or procedures shall be approved by Placer County Environmental Health Department.

COVID19 Protocols: Observed employees wearing face coverings.
Facility shall prepare and implement a written Workplace Specific Plan and address the following items:
•Physical distancing and COVID-19 signs posted.
•Barriers installed at point of sale.
•Per Plan, high touch areas are sanitized [hourly].
•Hand sanitizer to be provided at entrance to facility, or POS.



NOTES: Facility shall cease using 3 compartment sink inside of clothing store to clean and sanitize utensils. Sink was temped at 98F and does not reach minimum temperature of 120F. Facility is permitted to use 3 compartment sink inside the Hacienda Del Lago only. If facility chooses to make any changes to operation or equipment a submittal to Placer County Environmental Health is required.

Observed: Facility did not have a copy of the Certified Food Safetty Manager certificate available at the time of inspection. The certified individual shall work onsite to be considered in compliance.
